Black
pepper
Black pepper or Piper nigrum is a plant native to the coastal region of Malabar in south-west India. Malabar is also known as the “Pepper Coast”. Even in ancient times, black pepper was also cultivated in other places in South East Asia and was widely used and traded.
Black, white and green pepper come from the same plant. The chilli peppers grow as small grains in clusters on the branches of the pepper plant. The fruits of the plant resemble berries. When they are ripe, they turn red in colour. To make black pepper, the berries are picked before they are ripe. They are briefly immersed in boiling water and then dried in the sun. This produces the characteristic black, slightly shrivelled pepper tuber that can still be found in every supermarket today.
It’s worth expanding your pepper range to include the aromatic tail pepper and long pepper varieties. All three add flavour to your dishes, but differ considerably in smell and taste. Just smell and taste them side by side: a world will open up for you.
Salt
Salt occurs naturally as rock salt in the ground where inland or marginal seas once dried up. It has been extracted for centuries, for example in Salzburg, which is not called Salzburg for nothing: salt is the German word for salt.
